My go to breakfast food lately has been sweet potato hash browns. I often struggle with choosing between sweet and savory for breakfast, so these are perfect for my indecision. The natural sweetness of the sweet potato mixed with the onions and salt is such a winning combination. The hash browns are super easy to make. All I do is grate a sweet potato on the large side of a box grater, and mix in some salt and onion powder. Then I heat up some olive oil (coconut oil is good as well, especially if you want something with more sweetness) in a frying pan, drop in a scoop of the grated potato mixture, and flatten it into a round shape. It takes about 4-5 minutes for each side to brown. I then top each round with slices of avocado and a dollop of Greek yogurt. It is also delicious paired with a poached egg. (You can sub these items for vegan alternatives if you need to!)
